Our Hamo (Japanese Pike Conger) is carefully selected for its superior quality and flavor, sourced from renowned fishing grounds such as the Seto Inland Sea off Hyogo and Ehime, as well as the Hyuga-nada Sea off Miyazaki—some of Japan’s most famous regions for wild Hamo.

 

By focusing on high quality "freshness" and "transparency," and by live-finishing the fish while maintaining its freshness without stress, the plump meat quality and natural sweetness will spread in your mouth.

 

The star of the show, Hamo-Suki (nabe), is a special broth made with Hokkaido kelp and bonito.

 

In addition, the sweetness of the onions and the good quality fat of the Hamo (Japanese Pike Conger) mix to give the dish a deeper flavor.
